E u/us are pretty much the same, difference is maintenance days and when content is released (1day difference). China has some censorship on the game, what i know is bones do not show in china, ex: undead look more human-ish cos skin covers their exposed areas. Lord marogar in icc has skin etc. beyond this idk how far censorship go.

I found a way to enable Chinese undead model on English Cleint. Theoretically it should work on any client, but I tested on US server with a 7.0.3 enUS Client. What you need is simply add this line. SET overrideArchive "1". to World of Warcraft\WTF\Config.wtf. Then you will get a better undead model and lovely gravestones.

Chinese Undead Models Collection Since there is no unified thread about those, let's have one. I'm posting the ones i've got, and if someone has them for other expansions, then please share them with us. For those that don't know, the undead models are censored in the Chinese version of WoW, because showing human bones is taboo or something.

Goblin and Gnomes are literally on the same level as Pandarens are. It would no longer be a natural choice, rather being forced to pick race that people on average would avoid. Maybe if it could be expanded on 1 more race on each side (but that seems unlikely, at least on the horde side, dwarfs could work).
